Meet our new Spring Intern! Emma Gellerstedt is from Bettendorf, Iowa. She is a junior at Iowa State and is studying Dietetics with a minor in Food and Society. She will be working to help enhance the garden network in central Iowa and create programming for our blender bike!
What do you hope to gain during your time at Eat Greater Des Moines?
I want to learn more about the strong connection between the health of our food systems and the health of the people. I am excited to explore how I will be able to make a difference in our community’s food systems as a future dietician.
What do you want to do when you graduate?
I am planning to go on to complete my dietetic internship, become a registered dietician and then pursue a master’s degree.
What do you do you like to do for fun?
I love to travel. This past summer I spent 5 weeks studying in Florence, Italy. During this time I was able to travel to Greece and Switzerland where I went paragliding, hiking, cliff jumping etc. I also spend a lot of my time cooking and trying out new foods/recipes.
What is something that isn’t on your resume?
I grew up living right on the Mississippi river. I love to spend my summers boating and spending time on the water
